Quinoa Salad

Many of you may not know what quinoa is but I’m telling you to go buy some and make this a staple in your diet.  Don’t be afraid of it.  Quinoa is very high in protein and has every one of the nine essential amino acids. These nine essential amino acids are the ones that your body cannot synthesize in quantities sufficient to sustain good health, so they need to come from food sources. Quinoa is the only plant-based protein to contain all 9 essential amino acids. Many people think that quinoa is a type of grain, but it’s not. Quinoa is actually the seed of a plant related to spinach. This food staple is grown in the mountains of Ecuador and was once called “the gold of the Inca’s” because of how it increased stamina. At that time, the Incas didn’t know about quinoa’s nutritional facts or amino acids

As many of you know I recently started the Beachbody Ultimate Reset and this is one of the recipes from the reset and it is amazing!

Ingredients:

  • 1/2 cup cooked quinoa
  • 1 tbsp extra virgin olive oil
  • 1 tbsp fresh lemon juice
  • 2 tbsp finely minced fresh parsley
  • 1 tbsp finely minced fresh mint leaves
  • 1/4 large ripe tomato, diced
  • 1/4 cucumber, peeled and diced
  • 2 tbsp chopped pitted kalamata olives

Toss quinoa with olive oil, salt and lemon juice.  Gently fold in parsley and mint, followed by the remaining ingredients.  Cover and chill for 1 hour.  Serves 1

  1. Where can you typically find this in the grocery store? In the organic section? Also, how much would this cost?

    • Hey Morgan! Quinoa is found near the rice and is usually about $4-5 a box
