Healthy Beef and Black Bean Chili – Recipe of the week

This is one of my favorites.  Its filling, high in protein, and low in calories and fat.  I make it on Sunday and stick it in the fridge so its ready to go for my lunches throughout the week. 

Nutritional value:

A serving is 2-1/2 cups which gets you 260 calories, 3.5 g fat, 1g sat fat, 37g carbs, 9g fiber, and 22g protein. 

You will need:

  1. 1/2 pound of lean ground beef
  2. 2 chopped yellow onions
  3. 2 sliced celery stalks
  4. 1 yellow bell pepper
  5. 10 oz. white mushrooms
  6. 1 jalapeno pepper
  7. 1 large minced garlic clove ( I use 3)
  8. 2 14 1/2 oz cans diced tomatoes
  9. 1 15 1/2 oz can black beans
  10. 3 cups water
  11. 2 tbsp tomatoe paste
  12. 1-1/2 tsp chili powder
  13. 1 tsp ground cumin
  14. 1 tsp dried oregano
  15. 1/2 tsp sea salt
  16. 2 tbsp fresh chopped cilantro

How to make it:

Spray a large nonstick saucepan with nonstick vegetable oil cooking spray and set over medium-high heat.  Add the beef and cook, about 3-5 minutes.  Drain fat

Add all ingredients to large pot and cook over med heat for 45 minutes.
